Apple Cinnamon Waffles

Everyday waffles get a boost with apple juice, fresh apple and cinnamon.

Ingredients
  • 1/4 cup (60 mL) Tropicana Pure Premium® Apple Juice
  • 1 cup (250 mL) grated apple
  • 1 cup (250 mL) all‑purpose flour
  • 1 tbsp (15 mL) granulated sugar
  • 1 tsp (5 mL) baking powder
  • 1/2 tsp (2 mL) ground cinnamon
  • 1/4 tsp (1 mL) each baking soda and salt
  • 3/4 cup (175 mL) milk
  • 2 eggs
  • 1/4 cup (60 mL) melted butter
  • 1/2 cup (125 mL) whipping cream
  • Maple syrup
How to make it

  1. Heat waffle iron according to manufacturer's instructions.
  2. Using hands, squeeze excess moisture from apples. In bowl, whisk together flour, sugar, baking powder, cinnamon, baking soda and salt. In separate bowl, whisk together milk, apple juice and eggs; whisk into flour mixture. Whisk in melted butter and fold in apples. Cook waffles according to manufacturer's instructions.
  3. Meanwhile, whip cream until stiff. Serve waffles with whipped cream and maple syrup.
